Yet another Groundhog Day tradition that I haven't had time to post...Groundhog Pancakes!

Just use your regular Buttermilk Pancake recipe and use a small dollop for the head, larger dollop for the body, tiny dollops for front legs and a tail, then chocolate chips or blueberries for an eye and a nose.

Ingredients (enough for about 8 Groundhog Pancakes)
1 cup flour
1 tbsp sugar
1/2 tsp salt
1/2 tsp baking soda
1 egg
1 cup buttermilk
2 tbsp melted butter
1/2 tsp vanilla



Directions
  • Sift flour with sugar, salt, and baking soda.
  • Beat egg in a bowl and blend with buttermilk.
  • Add dry ingredients, beating until smooth.
  • Blend in melted butter and vanilla.
  • Cook on a lightly oiled pan. Turn when surface bubbles begin to break.
  • Then add chocolate chips or blueberries!

That's some inspirational stuff. Never knew that opinions could possibly be this varied. Thank you for all of the enthusiasm to provide such useful details here. I’m in fact fairly interested so will retain an eye out for updates! You are so great at obtaining what you would like to say out there in a way thats intelligent and entertaining. Im actually impressed!
